Nutella Cupcakes

When I spotted the recipe for these I immediately bookmarked them for a 'special occasion'. Its always difficult baking cakes and treats when theres just the 2 of  you. The trick is to always have a home for a least half of them to go to. I went to see my friend in London yesterday and wanted to take her a little treat which is where these bad boys came in. The sponge is super light and the nutella does 2 things, creates a crunchy frosting on the top and a lovely creamy inside. Make sure you eat at least 1 warm from the oven (give it time to cool otherwise you will be burnt by molten chocolate)

Makes 12 Cupcakes

You will need-
  • 140g unsalted butter at room temperature
  • 3/4 cup of sugar
  • 3 eggs
  • 1/2 tsp vanilla extract
  • 1 and 3/4 cup of plain flour
  • 1/4 tsp salt
  • 2 tsp baking powder
  • Jar of nutella
Make sure all your ingredients are at room temperature.


Pre-heat your oven to 160C.

Sift together your flour, baking powder and salt and put to one side. Next in a separate bowl whisk together your butter and sugar until light and fluffy.



Whisk in the vanilla extract and then 1 by 1 the eggs. Once incorporated whisk in the flour mixture bit by bit until everything is incorporated. It should be a pretty thick mixture.




Spoon the batter into a prepared cupcake tin and then top each one with a teaspoon full of nutella. Using a toothpick swirl the mixture into the batter. Be sure to push the nutella down to the bottom of the mixture so the chocolate runs all the way through the cake.




Bake in the oven for 20minutes.

  2. I made these this evening. Let's just say that yours look a lot better/prettier. Followed the instructions to a T (And I'm an avid baker, baking for 22 years), and they look dreadful. I'm going to have to put frosting on them before I can serve them unfortunately.

    Also: My toothpicks kept breaking. It's amazing I didn't loose any of the pieces in the cupcake. Sadness.

  3. Oh no! Thats such a shame, perhaps the batter was a little too thick, maybe my eggs were slightly larger or yours slightly smaller. Hope they still tasted delicious!
